A fresh and super cheap dish you can make with or without a BBQ. This BBQ chicken recipe is simple and great to mix it up from the usual Monday to Friday staples.

BBQ Chicken Recipe
Sticky BBQ chicken, corn salsa and wedges

Serves 2


For the chicken 

1/2 kg chicken drumsticks

2 tbsps Tomato Ketchup

3 tbsps soy sauce 

3 tbsps brown sugar

2 tbsps honey 

2 crushed garlic cloves

1 tsp chilli flakes 

For the Corn salsa

200g tin sweetcorn 

1/2 red onion  

1/4 Cucumber 

1 Tomato

Handful Coriander, chopped

Olive oil

Salt & pepper

Wedge of lime  


  1. Combine all of the chicken marinade ingredients in a large bowl and add the chicken making sure to coat all of the drumsticks. Cover the bowl and leave in the fridge for a minimum of 1hr (overnight for best results). 
  2. heat the oven to 200 degrees Celsius and place the chicken drumsticks on a nonstick baking tray. Place the chicken on the middle chef and bake for 20 minutes. 
  3. Whilst the chicken is in the oven, dice the red onion, cucumber and tomato and add to a bowl with the sweetcorn.  Mix in the chopped coriander, a slug of olive oil, a pinch of salt and pepper and a squeeze of lime juice. Cover and refrigerate until the chicken is cooked.
  4. After the 20 minutes are up, turn the chicken drumsticks over and spoon over some of the remaining marinade and bake in the oven again for a further 25 minutes until the chicken is cooked through. 

Serving Suggestions:

Serve along with a big serving of the chilled corn salsa, perfect to balance out the rich sweetness of the BBQ sauce. And pair with sweet potato wedges to make this BBQ chicken Recipe go further.
